Soft Gingerbread Cookies

Gingerbread cookies that are soft, chewy and full of holiday cheer. Try this easy cut out cookie recipe with all your favorite holiday cookie shapes that will have your home smelling like Christmas and taste like a classic gingerbread holiday.

  • 3 3/4 cups all-purpose flour

  • 3/4 tsp baking soda

  • 1/4 tsp baking powder

  • 1 tbsp ground ginger

  • 1 tbsp ground cinnamon

  • 1/2 tsp ground cloves

  • 1/4 tsp ground nutmeg

  • 1/2 tsp salt

  • 3/4 cup unsalted butter, softened to room temperature

  • 3/4 cup dark brown sugar

  • 1 large egg

  • 1 1/2 tsp vanilla extract

  • 1/2 cup molasses

  • 1 1/2 cups (173g) powdered sugar

  • 2 tbsp milk

  • 1 tbsp corn syrup

  • 1/2 tsp vanilla extract

1. Preheat oven to 350 degrees.
2. Combine the flour, baking soda, baking powder, ginger, cinnamon, cloves, nutmeg and salt in a large bowl and set aside.
3. Beat butter and sugar together in a large bowl on medium speed until light and fluffy.
4. Add egg and vanilla extract and combine.
5. Add molasses and combine.
6. Add dry ingredients and mix until combined.
7. Divide cookie dough into two equal parts. Roll each to 1/4 inch thickness.
8. Transfer cookie dough onto a cookie sheet and freeze for about 6 minutes.
9. Remove cookie dough from freezer and cut into shapes.
10. While cookie dough is still cold, transfer to a cookie sheet and bake for 6-8 minutes.
11. Remove cookies from oven and allow to cool for 3-4 minutes. Transfer cookies to a wire rack to cool completely.
13. Add the powdered sugar to a medium bowl, add milk, corn syrup and vanilla extract and whisk until well combined. Add additional milk if needed.
14. Add the icing to a piping bag and decorate!
