Simple Peach Jam

Summertime means it's peach season and the best time to make delicious peach jam. With four simple ingredients and an hour of your time you will be enjoying fresh peach flavor all year round.
- 4 cups peaches peeled and finely chopped
- 2 tbsp lemon juice
- 1 box Sure-Jell Fruit Pectin
- 4 1/2 cups sugar
- Peel and pit peaches and finely chop. Place 4 cups of peaches into an 8 quart sauce pan.
- Add lemon juice and fruit pectin and stir until blended.
- Bring to a rolling boil on high heat, stirring constantly. Using a potato masher, mash any chunks of peaches.
- Stir in sugar. Return to rolling boil and boil for 1 minute, stirring constantly.
- Remove from heat. Skim off any foam.
- Ladle peach mixture immediately into washed and dried canning jars, filling to within 1/4 inch of tops. Wipe rims and threads. Cover with lids and rings. Screw bands tightly.
- Place jars upside down on a towel until cooled.
- Check seals by pressing middle of lid with finger. If lid springs back, lid is not sealed and you'll need to refrigerate.
